The selection of fruits for our Christmas cake is guided by three key principles: quality, availability, and the distinct role each ingredient plays in the final product. Dates, sultanas, and raisins create the rich, dense base, while cherries and mixed citrus peel add beautiful colour. Roasted cashew nuts contribute texture and a satisfying crunch. Finally, the zest of our indigenous Kenyan lemon enhances the overall flavour profile while naturally preserving the cake and keeping it beautifully fresh.
